sopa-de-polloSopa de pollo also known as chicken soup is a warm delicious comfort food that is known around the world. Each family has their own recipe to make chicken soup some add noodles, others add potato; in my family we enjoy it with a little bit of white rice. As a child and a young adult I would say to my Tia, “No me siento bien.” My Tia would say, “Te voy a hacer una sopita de pollo.” Gracias Tia! I cannot count how many times I have said that to her just to get her to make my favorite soup.

To me, sopa de pollo is the best medicine for a cold, a stressful day or even a broken heart. Not sure what it was; whether it was the combination of chicken and vegetables or the way it warmed my stomach, it always seemed to lift my spirits and put a smile on my face.

During my morning run on this beautiful autumn morning I used all fives senses. I could feel a chill in the air, smell wood burning, look at the variety of colors of leaves, and I could hear the school buses picking up the children. I knew that today would be the perfect day to create my Tia’s sopa de pollo and of course add my twist.

Sopa de Pollo

  • 1 whole Chicken
  • 1 sweet onion
  • 10 small red potatoes
  • 2 large sweet potatoes
  • ½ cup of carrots
  • 1 sweet red pepper
  • 2 cloves of garlic
  • ground pepper
  • sea salt
  • adobo
  • olive old
  • ½ of orange
  • 1 cup of chicken stock (used from the baked chicken)

Season chicken with ground pepper, sea salt, adobo, drizzle of olive oil, and top off of with juice from half of an orange. Bake at 375 degrees for an hour In the pressure cooker or pot drizzle the bottom with olive oil and dice up vegetables. Add baked chicken and stock into pressure cooker or pot. Mix ingredients together. Cook for 30 minutes in the pressure cooker or 1.5 hours on the stove.

Serve and Enjoy!

I love the hearty combination that make up this soup: potatoes, sweet potatoes “bonito”, a little bit of pumpkin, and carrots. Now my favorite soup is also my children’s. I will continue to pass on my Tia’s traditions through my love of food.
