CubanWithATwist - How To Make Frijoles Rosado

Frijoles, beans; a staple in Latin dishes, no matter what country you are from. Beans are not only a delicious side or main dish but they are also healthy; a great source of protein, fiber, and antioxidants.

They are many types of beans most commonly found are black, red, white, and multicolored. Beans are already filled with an abundance of flavor but when other seasonings are added your taste buds will be jumping with joy. Black beans are traditionally made with green peppers
and tend to more salty. On the other hand red beans are made with red or orange peppers, and tend to be sweeter.

An alternative to buying a bag of dry beans are canned beans are a way of cutting down the cooking time instead of bagged fresh beans, which need to be soaked over night and cooked for a longer period of time. Canned beans are high in sodium, so no additional salt is needed. If you are using canned beans I recommend Goya beans they have a great-based flavor and need very little extra seasoning.

One of favorite beans type of beans are rosado “pink.” I would have these beans while I was growing up in Miami. As you may have already guessed, yes of course I have re-invented my Tia’s original frijoles rosado recipe. My addition of the slice of ham and the sweet potato gives the beans a smoky sweet flavor.

Frijoles Rosado
Ingredients:

  • 1 bag of red beans
  • 1 sweet potato
  • 1 smoked bone in ham chop
  • 3 cloves of garlic sweet paprika salt
  • 1 sweet onion
  • 1 sweet red pepper
  • 1 sweet orange pepper olive oil

Directions:
Soak red beans over night. Add water and beans to pressure cooker, make sure that the water completely covers the beans. Add salt to taste. Add one sweet potatoe to mixture in pressure cooker. Sauté ham in olive oil until the ham is golden brown on both sides. Chop up the following ingredients: garlic, onion, sweet red pepper, and sweet orange pepper. Add chopped ingredients to pan with ham and allow to cook for 5 to 6 minutes. Add sweet paprika to mixture and stir. Add ingredients to pressure cooker. Cook on high for 30 minutes. Add beans over white rice.
